Rocket

Jack is starting to trial rocket for Ōtaki Vege Bags. This spicy green grows well in the winter, and is super versatile. It works just as well in a salad (even simply rocket, salt, lemon, olive oil is delicious) as it does cooked. You can stirfry it, and I personally like to use it to add a bit of spice to a saag/palak curry recipe. I like palak paneer (you don’t have to own all of the spices in this recipe for it to be delicious!), but it’s common to use potatoes (aloo, in hindi) instead.

Kale

I mostly use kale in stirfries and curries, stripping the leaf of the stem with my thumb and forefinger (I find the stem too fibrous). My favourite way is as a green in the palak paneer recipe linked above.

Another option is to use it in a salad. You salt and tenderise the kale by “massaging” it for a couple of minutes, which makes quite a nice hearty salad option. Here’s a bit more detail on preparing kale for salad. In winter, I really enjoy a warm kale and pumpkin salad - something like this recipe here.
